KULCHE-CHOLE
INGREDIENTS FOR KULCHE
2 cup maida / plain flour / all purpose flour
1 tsp sugar
1 tsp baking powder
¼ tsp baking soda
½ tsp salt
2 tsp oil
¼ cup curd
¾ cup lukewarm water, to knead dough
¼ cup kasuri methi
2 tbsp butter, to brush
INSTRUCTIONS FOR KULCHE
Firstly, in a large mixing bowl take 2 cup maida, 1 tsp sugar, 1 tsp baking powder, ¼ tsp baking soda, ½ tsp salt and 2 tsp oil.
add in ¼ cup curd and mix well.
Further add ¾ cup lukewarm water or as required and knead dough.
knead to smooth and soft dough adding more water if required.
cover and rest for 2 hours or more.
Pinch a ball sized dough and flatten.sprinkle some kasuri methi.gently roll to oval shape using rolling pin.brush with water over kulcha.furthermore, slowly flip the kulcha and put it on hot tawa.
Now after a minute, flip the tawa upside down and cook kulcha directly on flame till they turn golden brown and puffs up.
Gently scrape the kulcha from bottom and remove. Also brush some butter.
finally, serve plain kulcha hot with chole or your favourite curry.
To make chole for kulche-chole
Ingredients:
1 cup boiled chickpeas (white)
2 tomato
1 onion
1 potatoes
1 Green chilly (optional)
1 teaspoon chaat masala powder
salt as required
Procedure:
Mash the boiled chole with a spatula and transfer to a bowl. Do not separate the water from chole before mashing. Transfer the chole in a large bowl and add in chopped onions, boiled potatoes and tomatoes along with chaat masala, salt, red chilli powder and lemon juice. Serve with kulche and enjoy!
